Little helper

I made these chocolate chip cookies the other day:
Ingredients
1/2 cup butter, softened
1/2 cup peanut butter
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
2 tablespoons light corn syrup
2 tablespoons water
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped semisweet chocolate




Directions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a large bowl, cream together the butter, peanut butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the corn syrup, water, and vanilla. Combine the flour, baking soda, and salt; stir into the peanut butter mixture. Fold in chocolate chunks. Drop by 1/4 cupfuls 3 inches apart onto ungreased baking sheets.
3. Bake for 12 to 14 minutes in the preheated oven, or until edges are golden. Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.
I used beet sugar, since Isaac is allergic or sensitive to cane. And instead of corn syrup I added honey. I also used coconut oil instead of butter.
I had a horrible experience with coconut oil...
Okay. So, now I know, do not take 3 Tbs of coconut oil melted in your tea all at once at night on an empty stomach. Yea O.o I got woke up by chills past midnight and was cleansing the rest of the day. =P
I still can't smell into the coconut oil container, which is sad because I used to love the smell. Now it makes me gag. But, the peanut butter hides the coconut flavor quite well =)
I had a little helper =) Wade watched and helped butter the stone and cookie sheet. Love baking stones!
I really really like this cookie recipe. I made a double batch and froze part.
Well it's time to lay my little Ben baby down. It's bed time...one of my favorite times of the day now, not because I want to go to bed, but because the little men get to retire and Isaac and I get to hang out a little while alone =)
