Update on the Black Bean Brownies

I haven't made a full recipe of the black bean brownies. I only had enough beans to make a like 2/3 the recipe. In any case, here is the recipe which you will want to follow if you want some nice chocolate snack bars. If you want real brownies with regular sweetness just double the sugar ( 1 cup versus 1/2 cup). If you want more chocolaty just add more cocoa. I may still twist this recipe a little, but I think it's pretty close =)



Coconut Black Bean Brownies (and they don't have to be coconut)

Black bean are used to replace flour in this chocolatey, coconut-infused brownie!
Ingredients
  • 2 cups black beans, cooked (or 1 can, drained and rinsed)
  • 1/2 cup sugar (or sweetener of choice) ------> OR 1 cup for more of a regular sweet brownie taste. ( I use honey for sweetener. If you use honey it would be 1/4 - 1/3 cup for less sweet brownies...brownie bars :) or 1/2 - 2/3 cup for regular brownies)
  • 2 large eggs
  • 1/4 cup virgin coconut oil ( or butter or oil)
  • 1/2 to 3/4 cup cocoa
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • 1/2 cup of coconut flakes + more for sprinkling (optional)
  • If you have chocolate chips, sprinkle some on top :D
Instructions
  1. Preheat oven to 350 and lightly grease a 8 in. square baking pan. (I brushed mine with coconut oil)
  2. Add all ingredients to blender or food processor and blend until very smooth.
  3. Pour into baking pan, smooth out the top, and sprinkle with more coconut flakes.
  4. Bake for about 30 minutes, or until toothpick inserted in center comes out clean.


We really LOVED these brownies! Try them :) They are so good!
